Chicken strips (fingers) are America’s favourite, especially kids love them. Here is a healthy version of chicken strips recipe.
Baked in the oven, almond crusted pieces of chicken are so crunchy, moist and easy. Only 70 calories or 2 WW points+ each.
I love to roast nuts and seeds and although they lose a bit of their nutritional value, I enjoy more foods this way. If roasting the nuts helps me to eat more vegetables and lean proteins, I’ll take it.
To roast almonds, preheat oven to 375 F degrees, place them in a single layer on a baking sheet and bake for 5-7 minutes or until they turn golden or until you smell them (seriously). I recommend to set the timer because it is very easy to forget and burn the nuts.
By the way, I always keep a jar of roasted almonds on hand. Mainly for snacking.
As I always mention, I buy only organic chicken. Costco in the US has very good prices. Check it out.
If you want leftovers, double the recipe. This recipe served enough for dinner of 4 and a few pieces were left. These are the kind of leftovers you want. Everyone loved them in my house.
Chicken strips are great as an appetizer with organic ketchup (I was short on time and served them this way) or your favourite healthy dipping sauce, on top of salad, as a main dish served with a side like brown rice or quinoa. Enjoy!
Ingredients
- 1.5 lbs or 3 large chicken breasts
- 1 1/4 cup roasted almonds, unsalted
- 1 egg
- 1 egg white
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- Cooking spray
Directions
- Preheat oven to 425 F degrees. Line baking sheet with parchment paper, spray with cooking spray and set aside.
- Wash, pat dry with paper towel and cut into 1/2 inch thick strips chicken breasts.
- In a bowl, beat egg and egg white for a minute. Set aside.
- In a food processor, grind into fine powder roasted almonds. Add garlic powder, salt and ground black pepper. Pulse to mix and transfer into a separate bowl. *To roast the almonds just bake them in the oven at 375 F degrees for 5 - 7 minutes or until golden brown.
- Dip each strip into an egg mixture, coat completely in almond mixture and place on baking sheet.
- Bake for 12 minutes or until golden brown on each side, turning once.
- Serve with organic ketchup or your favourite healthy dipping sauce.
